Local wheat and water combine in a seven day fermentation process to create maximum character and mouth feel. Multiple distillations are followed by a 24 hour filtration process through the most porous of carbons, coconut shell carbon. This crafts a spirit of exceptional purity and taste. With soft cream soda, light toffee and subtle biscuit notes, we recommend you simply serve straight from the freezer or over ice.

Smooth and vibrant Hills & Harbour Gin offers a true taste of Galloway. With local Noble Fir needles and Bladderwrack Seaweed, it leads with juniper and is balanced with hints of forest fir, tropical fruit, citrus spice, tangy sherbet and a subtle scent of the shore. One of the rare gins in Scotland to be distilled with it’s own spirit, they take local wheat and water combine in our 7 day fermentation process to create maximum character and mouth feel. This process takes more time, energy, cost and know-how, but delivering a gin that lives up to the true meaning of ‘craft’ is essential.

Burnt Orange & Smoked Pineapple join our Hills & Harbour Gin to create the world’s first and only 40%ABV distilled gin cocktail. Made using 100% fresh fruit, we put days of graft and craft into every batch. To capture the fresh flavours we hand-smoke, torch, macerate, press and then distill to create a full strength cocktail. We love it over ice, shaken up and strained martini style or for a long serve why not get creative with flavoured soda waters.
