Kilchoman is a family run Islay business established in 2005 which farms 2,300 acres including craggy hillground grazed by their blackface sheep and fields where their Aberdeen Angus cattle feed on machair grasses and draff (barley husks discarded during the whisky-making process). The fertile ground surrounding the distillery is reserved for Kilchoman's annual barley crop. Sown each spring, once Islay’s 50,000 migratory geese have departed, the barley is harvested in early autumn when whisky-making commences: barley malting, distillation, maturation and bottling, all done at the distillery - Islay’s only Single Farm Single Malt Scotch Whisky. Kilchoman's 100% Islay philosophy means that the responsibility for the quality and consistency is not outsourced but completed on site with skill, care and attention to detail.
During the peating process, the barley absorbs the distinct character of Islay’s many ocean-soaked peat bogs which adds waves of rich, maritime smoke. Kilchoman's 90 hour fermentation develops complex esters and lactic acid which produces creamy, buttery and particularly fruity notes. This long fermentation when paired with some of the smallest stills in Scotland, creates dram purity and unparalleled levels of copper-contact, creating the Kilchoman balance of earthy maritime peat smoke and light floral citrus notes. The spirit is matured in a combination of cask types which contribute a unique character and colour to balance Kilchoman’s classic peat smoke and floral sweetness.
Named after an inlet on Islay’s rugged Atlantic coast, Sanaig is a vatting of both sherry and bourbon casks. The high proportion of Oloroso sherry influence adds a balance of dried fruits and spices to classic Kilchoman citrus sweetness and peat smoke character.
Nose: fragrant heather, raisins, pear, orange peel, stoned fruits, mixed spices and rich peat smoke
Palate: over ripe plums, red cherries and hints of citrus followed by rich barbeque peat smoke, toffee, oak and dark chocolate
Finish: mouth:coating mixed fruit, caramel, cinnamon and clove with layers of brown sugar, spices, peat smoke and lasting sweetness.
