From the Gaelic, Gleann Aileachaidh, meaning Valley of the Rocks, this independent, Scottish owned and managed whisky company focuses on the important things: making great whisky and enjoying life.
This 11 year old release is part of Glenallachie’s wood finish series, designed to highlight the impact of different casks on the Glenallachie spirit. Initially matured in American oak ex-bourbon barrels, the whisky is then transferred to Palo Cortado sherry puncheons for a secondary maturation.
Palo Cortado is a rarer style of sherry, sitting between Oloroso and Amontillado, bringing together nutty complexity with refined sweetness. The result of the Palo Cortado cask finish is a whisky that balances richness with layers of dried fruit, chocolate and spice, allowing the cask influence to come through clearly.
Nose: honeycomb, butterscotch and orange peel, with hints of toasted almonds and mocha.
Palate: waves of dark chocolate, dried apricots and heather honey, followed by cinnamon spice and roasted nuts.
Finish: long and warming, with lingering cocoa, spice and gentle oak.
